How to keep beef stew from coagulating?

I made beef stew in my crockpot yesterday, and once it was done, I put it in a large bowl in the refrigerator. I noticed this morning that the stew has coagulated. I think once I heat it up, it will be fine to eat, but does anyone have any advice on how to avoid this in the future?
